Snow Day Treat

It final snowed!!! We are all off for the day. The kids and hubby are outside playing and I am inside preparing a delicious breakfast to warm their souls when they come in. Chocolate pancakes are on the menu. I thought I would share the recipe so you could treat your loved ones... Hope you enjoy!!!

Chocolate Pancakes

2 cups flour
3 tsp baking powder
1/2 tsp salt
1 cup sugar ( or less to taste)
1 cup milk
4 tsp butter, melted
2 eggs
4-6 tsp cocoa (I use 5)

Combine dry ingredients. Add remaining ingredients and stir only until mixed.

Preheat a non-stick skillet until sizzling hot. Brush lightly with oil or butter. Cook on skillet until done.

For fluffy pancakes, seperate the egg yolks from the whites. Beat whites until stiff peaks form. Gently fold into batter.

Organized Meal Planning

Our house is crazy seven days a week! Between working, kids sports, and my crazy volunteering I need all the help I can get! So here is one of the ways I try to get a healthy home cooked meal on the table.

My first recipe to highlight is Teriyaki Chicken. This requires two gallons sized Ziplock bags.

Ingredients:
1 Bag baby carrots
1 Large red onion (cut in chunks)
2 20oz. Cans of pineapple
4 Cloves of garlic
4 Chicken breasts
1 Cup teriyaki sauce (plus 1/4 cup for use at later time)

Split a ingredients evenly between two bags and freeze.

To cook, thaw bags in frig. over night. Dump both bags in slow cooker, add 1/4 cup teriyaki sauce and cook on low 8 hours or high 4 hours. Serve over rice.
